Our Story

The Founders and Early Days

Mr. L.S. Hartzog was a pioneer in the restaurant industry. His bakeries first supplied rolls for KFC and later began supplying buns for Wendy's. He also became the very first Wendy's franchisee. He established over 63 Wendy's restaurants. Mr. Hartzog owned over 150 restaurants, including 75 KFC locations, and helped develop the pressure frying system used by KFC. His brother-in-law, Mr. Wayne Johnson, served as Vice President of restaurant operations for his company.

In 1964, Mr. Hartzog opened the first Hart's Fried Chicken in Mobile, Alabama. By 1972, he sold his KFC stores, bakeries, and equipment company to KFC's parent company. However, to avoid competition with KFC, Mr. Wayne Johnson bought the Mobile operations. Since then, Hart's Fried Chicken has been managed by three generations of the Johnson family: Mr. Wayne Johnson, his son Mr. Robert Johnson, and his grandson Mr. Matthew Johnson. Mr. Robert Johnson led the company for 40 years, eventually retiring in 2014. Mr. Matthew Johnson took over the company, serving as the current President of Hart's Fried Chicken.

New Partnership

Upon Mr. Wayne Johnson's retirement in 1980, he sold minority shares to his long-time employee Mr. Dave Hepler, who later sold these shares to his son, Mr. Kevin Hepler. Mr. Kevin Hepler is currently the Vice President of the company.
